This is my favourite smoothie at the moment. It’s a mixed berry smoothie, with a lovely twang from cranberry juice and a wonderful pink colour which makes me smile. The beauty of this is that it uses frozen berries, which are brilliant because not only does it mean you can have beautiful English summer berries out of season, it also makes the drink cool and icy without the addition of ice-cubes, which waters down the flavour.
Frozen berries are cheap and easy to come by and if you have a bag stashed in the freezer you always know that a delicious, refreshing smoothie is just minutes away. They are usually marked as ‘summer berry mix’ or you can buy things like raspberries and blackberries frozen separately and you can make up your own mix.
The recipe is a rough guideline because I never measure things out for a smoothie
(Should do two people or a very large glass for one person – sometimes I have the whole lot to myself for a weekend breakfast)
One ripe banana, sliced up.
Two or three of handfuls of froze summer berries
A good glug of cranberry juice ( I use Ocean Spray juice drink) – approx 300ml
Two tablespoons of plain natural yoghurt (or Greek yoghurt, or cream if you were feeling indulgent)
Throw all ingredients into a blend and whiz until smooth. If you blender gets clogged up and stops turning add some more cranberry juice to loosen it.
